Organic Bread Sauce

Ingredients
Suitable for vegetarians
1 medium onion, cut in half
15 cloves (or fewer, depending on taste)
1 bay leaf
6 black peppercorns
425ml milk
75g freshly made white breadcrumbs
50g butter
2tbsp double cream
salt and pepper
Method
Stick the cloves in the onion halves and place in a pan with the bay leaf, peppercorns, milk and salt. Bring to the boil, then take off the heat, cover and leave to infuse for 2 hours.
Remove the onion and put to one side. Discard the bay leaf and peppercorns, then stir the breadcrumbs into the milk along with 25g of the butter and some more salt, if liked. Put over a very low heat for about 15 minutes or until the sauce has thickened. Beat in the rest of the butter and the cream and adjust seasoning.
