Pea and Broccoli Chowder

Serves: 4
Ingredients
Delicious served with chunky chicken sandwiches.
1tbsp olive oil
1 organic onion, finely chopped
1 garlic clove, crushed
200g (7oz) organic broccoli, washed and chopped
675g (1½lb) frozen petit-pois
700ml (1¼ pints) vegetable stock
15g (½oz) organic butter
Method
1. Heat the oil in a large pan. Add the onion and cook over a medium heat for 5-6 minutes until softened. Add the garlic and broccoli and cook for a further 2 minutes.
2. Stir in ¾ of the petit-pois and pour in the stock. Bring to the boil and simmer for 10-12 minutes.
3. Carefully transfer the soup in batches to a liquidiser or blender and whiz until smooth.
4. Return the soup to the pan and add the remaining petit pois. Bring to the boil and simmer for 2 minutes. Season to taste and stir in the butter.
