Brussel sprouts with bacon

Serves: 6 - 8, Wiltshire

Ingredients

2 pounds Brussels sprouts
3 strips lean bacon
1/2 cup balsamic vinegar
Salt
1/4 cup pine nuts, toasted

Method

Prepare sprouts, (remove outer leaves and cut an "X" in the bottom). Steam over boiling water just until tender, Cool and cut into lengthwise quarters. Set aside.

While sprouts steam, cut bacon into thin strips. Cook in skillet over medium heat until crisp. Increase heat and add vinegar. Cook for about 3 minutes. Reduce heat and add sprouts.

Heat through, season to taste . Add pine nuts, stir and serve.
