Organic Passion Fruit Butter Cake

Ingredients
125g butter
165g caster sugar
2 free range eggs
300g self-raising flour
125ml milk
quarter cup of passion fruit pulp
Method
Grease a 21cm baba cake tin or ring tin.
Place the butter, sugar, eggs, flour and milk into a medium bowl, and beat on low speed until ingredients are combined.
Beat on medium speed until the mixture is smooth and has changed colour.
Stir in the passion fruit, reserving a little for the icing.
Spread the mixture in the prepared tin and bake at moderate heat fro about 45 minutes.
Turn onto a wire rack to cool.
Make a glace passion fruit icing by sifting 240g of icing sugar in to a small heatproof bowl. Stir in one teaspoon of soft butter and approx 2 tbls. of milk to form a firm paste. Stir over a pan of hot water until it becomes spreadable, then add the pulp of one passion fruit.
Spread over the cooled cake and allow to drizzle down the sides.
