Organic Welsh Rarebit

Ingredients
Suitable for vegetarians
When I was a child, my mother used to give us cheese on toast and call it Welsh Rarebit. It wasn't until years later I discovered the delights of the real thing. I have it for a breakfast treat - sometimes with a poached egg on top (which apparently makes it Buck Rarebit)
50g butter
25g flour
2 tbls milk
2 tbls beer
1 tsp English mustard powder
Seasoning
Worcestershire sauce - a few drops
200g grated Cheddar cheese
4 large slices bread (I think wholemeal is nicer)
Method
Melt the butter in a pan and add the flour. Cook for a couple of minutes, stirring continuously. Gradually add the milk, beer, mustard, seasoning and Worcestershire sauce. Take off the heat and mix in the cheese.
Toast and butter the bread then spread the cheese mixture on top and grill until golden.
