Terrine of Welsh Organic Banana-flavoured Milk, finished with a Caramel of Honey and Strawberries

Ingredients
Suitable for vegetarians
4 cartons organic banana milk
3 leaves gelatine
50g granulated sugar
3 eggs, seperated
1 whole banana
For the caramel:
150ml water
2 tbls Welsh organic honey
225g strawberries
Method
Whisk egg yolks and sugar in a bowl over a bain-marie until doubled in volume.
Add the flavoured milk, whisk until slightly thickened.
Add the gelatine, remove from the heat, whisk until cool and pour into a terrine or loaf tin lined with three layers of cling film.
Skin the banana and slice into the tin, and place over the mixture. Chill until set.
Combine the honey with the water and heat until almost caramelised. Add the strawberries and allow to cool.
To serve place slices of the terrine on a plate and pour sauce around. Enjoy!
