Organic Baked Rice Pudding

Ingredients

Suitable for vegetarians
100g short grain pudding rice
450ml milk
450ml double cream
75g caster sugar
25g butter
1 split vanilla pod (optional)
Freshly grated nutmeg

Method

1. Pre-heat the oven to 180C/350F/Gas Mark 4
2. Lightly butter a pudding basin or ovenproof dish about 1 litre in size.
3. Wash the rice under cold water and allow to drain.
4. Bring the milk and cream to the boil with the vanilla pod (if using) and add the rice and sugar. Stir well.
5. Pour into the oven dish and grate a little nutmeg over the top. Dot with knobs of butter.
6. Put in the oven and bake for about 15 minutes, then lower the temperature and bake for a further hour and a quarter.
7. It should be golden brown on top, and creamy underneath.
