Organic Cheese Sauce

Ingredients

Suitable for vegetarians
50g butter
50g flour
1 teaspoon of ready made English mustard
salt, pepper
1 pint of milk
300g strong, grated Cheddar cheese

Method

Melt butter, stir in flour.
Cook gently for 4 minutes (careful not to singe)
Gradually add the milk.
When smooth, add the salt, pepper, mustard and finally the cheese.
Don't continue cooking once cheese has melted.
