Organic Welsh Omelette
Serves: 4
Ingredients
4 slices organic streaky bacon
1 medium onion
Parsley and other herbs
4 eggs
120 ml of whole milk or cream
Freshly ground black pepper
100g grated cheese
Method
Lightly fry bacon. Remove from the pan and cook the onions gently in the bacon fat.
Season and spoon into 20cm pie dish and spread evenly.
Beat the eggs and cream and pour over the onions, add herbs and sprinkle with cheese.
Bake at 180C (350F) for until eggs are soft and cheese has melted. Cut and serve immediately.
