Organic Onion and Potato Soup

Ingredients
Suitable for vegetarians
A great winter warmer this, I often add more garlic to ward off those cold germs!
2 tablespoons of oil
1 large onion, chopped
250g potatoes, chopped
1 pint stock (home-made or use organic stock cubes)
1 clove garlic
1 bay leaf
salt and pepper
300ml milk
chopped parsley to garnish
Method
Heat the oil in a large pan, add the onion and potatoes and cook for 5 minutes until softened.
Add the stock, garlic, bay leaf and seasoning.
Simmer for 30 minutes.
Allow to cool, remove the bay leaf and blend for 30 seconds.
Return to the pan, add the milk and reheat.
Serve sprinkled with the chopped parsley.
