Organic White Sauce (Bechamel)

Ingredients

Suitable for vegetarians
This is used as a basis for many recipes, eg.see Vegetable Souffles

40g butter or margerine
2 tablespoons of flour
300ml of warmed millk
salt and freshly ground pepper

Method

Melt butter or margerine in a heavy-bottomed pan and stir in flour with a wooden spoon.
Add milk slowly, stirring constantly until the sauce thickens.
Season to taste and simmer on a very gentle heat for 6 - 8 minutes.
Thin out with a liitle more milk if necessary.
