Organic Garlic and Herb Toad in the Hole
Serves: 4
Ingredients
2 tbsp olive oil
450g pork sausages
For the batter:
125g plain flour
pinch salt
2 eggs
300ml pint milk
2 garlic cloves, finely chopped
2 tbsp chopped fresh chives
Method
1 Preheat the oven 220C/Gas 7. Heat the oil in a small roasting tin on the hob, tilting the tin so that the oil covers the bottom and sides. Add the sausages and place in the oven for 10 minutes, shaking the tin occasionally, until browned.
2 Meanwhile, make the batter: sift the flour and salt into a bowl. Make a well in the centre and add the eggs and a little of the milk. Whisk the eggs and milk together, gradually incorporating the flour to make a paste. Gradually whisk in the rest of the milk to make a smooth batter. Stir in the garlic and chives.
3 Pour the batter around the sausages and return to the oven. Reduce the oven temperature to 200C/Gas 6 and cook for 30-35 minutes, or until the batter is risen and golden.
