Organic Ham and Cheese Gratins
Serves: 4
Ingredients
Butter, 50g
Spinach, 175g
Cheddar cheese, 110g grated
Cooked ham, 8 small slices
Fresh breadcrumbs, 4 tablespoons
Single cream, 150ml
Salt and freshly ground black pepper
Method
Put the softened butter into a bowl with the English mustard and mix together thoroughly. Use half of this mixture to butter four individual gratin dishes.
Wash the spinach and pack it into a saucepan. Cook it for about 2-3 minutes, without adding any water to the saucepan, until the leaves have wilted. Drain well, squeezing out the excess moisture with the back of a spoon.
Sprinkle a little of the cheese into the base of each dish. Arrange two slices of ham in each with an equal amount of spinach. Sprinkle the rest of the cheese and breadcrumbs evenly over the surface
Pour an equal amount of organic cream into each dish, then season with a little pepper. Dot the surface with the rest of the butter mixture.
5. Preheat the grill. Pop the dishes under the grill and cook until the cheese bubbles and turns golden brown. This will take about 3-4 minutes. Serve immediately.
