Organic Cheese and Onion Puddings

Ingredients
Suitable for vegetarians
Butter, 50g
Bread, 8 slices from a medium or thin-sliced loaf
Onion, 1 small finely chopped
Cheddar cheese, 150g, finely grated
Eggs, 2
Milk, 450ml
Salt and freshly ground black pepper
Method
Preheat the oven to 180C/Gas 4. Use four individual baking dishes for the puddings and some butter to grease them.
Using a small round biscuit cutter, stamp out as many circles as possible from the slices of bread. Layer half of these circles in the dishes.
Melt the rest of the butter in a small saucepan and add the onion. Fry it gently until softened. When they are golden tip them over the bread in the individual dishes.
Sprinkle half the grated cheese over the onion, neatly layer the rest of the bread circles over the cheese.
Beat the eggs in a large jug, then add the milk and beat again. Season with some salt and pepper. Pour this mixture carefully over the bread in the dishes. Leave to soak for around 10 minutes.
Sprinkle the rest of the cheese evenly over the top of the bread, then carefully transfer the dishes to the oven. Bake for 30-40 minutes, until the puddings have risen up and turned golden brown.
