ORGANIC FISH PIE - FUN FOR ALL THE FAMILY!

This winter, try this delicious organic version of an organic traditional fish pie - a delicious and healthy organic treat for your whole family. It can be hard to find a dish that the whole family will love, but this fish pie, made with plenty of organic fish and milk, is sure to be a winner- even for fussy eaters. Milk is one of the easiest ways to start going organic and this way you can give your family a tasty dish full of fresh organic ingredients, that are easily available from all good shops.

Milk is a great way to go organic. We all know that milk is a great source of calcium, but organic milk has the added benefits of coming from cows that, unlike cows on conventional farms, haven't grazed on land treated with artificial herbicides, insecticides or fungicides. They haven't been given GM feed and are only given antibiotics when ill. Pregnant women and breast-feeding mothers who want to go organic, may want to add organic milk to their shopping.

The Organic Milk Suppliers Co-operative (OMSCo) are a group of British organic dairy farmers. Their organic milk is produced to the highest quality and standard with vigorous testing for pesticide residues - it's just more pure, more natural milk, which we believe is better for you, the cows and the countryside. OMSCo have teamed up with top culinary nutritionists to produce this balanced recipe, which provides growing children with an essential source of calcium.

Organic farms also have high animal welfare standards and are more environment-friendly. According to OMSCo, a typical family drinking two pints a day will be supporting a huge 1,200 square metres of British organic countryside. That's the equivalent of only spending £35 per pint a year - not much for ensuring you are giving your family the best.

So while enjoying your tasty traditional fish pie this winter, be assured that your choice is better for the countryside, the cows, and above all for you and your children.

Organic Fish Pie

Summary:

Simmer organic haddock in milk. Use the milk to make a white sauce, then add the fish, eggs and parsley in a dish and top with mashed potato mashed potato. Bake until golden.

Serves 4

450g / 1lb organic smoked haddock fillet, skinned

125g / 4oz fresh organic haddock fillet, skinned

300ml / ½ pint organic milk

25g / 1oz organic butter

1 organic onion, finely chopped

1 organic garlic clove, crushed

50g / 2oz plain organic flour

2 small hard boiled organic eggs, quartered

50g / 2oz cooked peeled prawns

2 tbsp chopped fresh organic parsley

grated zest and juice 1 organic lemon

For the topping:

700g / 1 ½lb floury organic potatoes, peeled and cut into chunks

2 tbsp organic milk

knob organic butter

salt and freshly ground black pepper

1 Preheat the oven 200C/Gas 6. Cut the smoked and fresh haddock into large pieces. Place in a frying pan and pour over the milk. Bring to the boil, then cover and remove from the heat. Set aside for 10 minutes. Meanwhile, melt the butter in a large pan and cook the onion and garlic over a gentle heat for 5 minutes.

2 Lift the fish out of the milk and set aside. Reserve the milk. Add the flour to the onion and cook, stirring for 1 minute. Remove from the heat and gradually stir in the reserved milk. Return the heat and bring to the boil, stirring constantly. Simmer for 3 minutes, then remove from the heat.

3 Roughly flake the fish and stir into the sauce with the eggs, prawns, parsley, lemon rind and juice and seasoning. Spoon the mixture into a 1.7 litre / 3 pint ovenproof dish. Set aside.

4 Cook the potatoes in boiling salted water for 10 minutes, until tender. Once cooled, children will love mashing the potatoes!

Drain well and mash until smooth, then stir in the milk and butter. Using a fork, spread the potato over the fish and sauce. Bake for 20 minutes, until the potato is golden.
